Midweek Barbeque... Is it Possible?

The long and the short answer is...yes! Who said you have to wait for a picnic or tbe weekend to enjoy some great barbecue? If someone told you that, they lied! I just discovered a wonderful secret to homemade, midweek vegan barbecue. If you follow me on Instagram you, have already seen my video dancing with Bailey Boo (my fur baby) because I was so excited about this meal! It's a nice change of pace from my normal Thai recipes, its quick, doesn't cause for many ingredients, taste pretty good and close to the typical southern style pulled chicken or pork barbecue you're probably use to.... without further ado here is the recipe: Jackfruit  2 14-ounce cans young jackfruit in water 1 cup BBQ sauce  + more for topping 1 onion, chopped Garlic clove , minced 2 tablespoons of olive oil AVOCADO SLAW  (optional) Coleslaw mix 1/2 ripe avocado 1/4 cup of lime juice 1 minced garlic clove Salt and pepper to taste 1 tablespoon of olive oil 1 tablespoon of Apple cide

I recently got back on my vegan wagon, and I'm so happy about it! It has only been a few days and I can feel the difference, for the better. I realized that I had only been focusing on dinner recipes and making enough to last for lunch, but you know the old saying "breakfast is the most important meal of the day"... I agree, but I also feel that every meal, is the most important meal at that very moment. So I am going to do my best to share more of my recipes, for different meals of the day. At this very moment, I will be sharing a quick, delicious breakfast option. It will take some work the night before, but it really is simple! You will need a mason jar, or bowl with a lid. Steel Oats, almond milk or whatever milk you desire thats non-dairy (for vegan options ) berries, a small banana( optional) agave nectar, or brown sugar to taste for desired sweetness. Since I was able to get yesterday's post out I decided to back track to my "official first meal back to Veganville". For some reason I am in love with red curry at the moment. So anything that is Thai or curry related I'm all in, did I mention the word love?! Well I really mean it... Ok so the reason you visited the blog today was for another recipe, right? Well here goes: This is my Red Thai Curry Vegetables recipe, get your taste buds ready! Here are the ingredients you'll need: 1 1/4 cup of jasmine rice or any long grain rice 1 tablespoon of olive oil 1 small onion Salt to taste 1 tablespoon of grated ginger 2 cloves of garlic minced 1 red bell pepper, slice into thin long stripes 1 yellow or orange bell pepper, slice into thin long stripes 3 carrots, peeled and sliced diagonally 1 cup of broccoli 2 tablespoons of red curry paste 1 14oz regular  coconut milk 1/2 cup of water 1 1/2 cup of kale, remove ribs of the kale and slice into thin stripes

Its been too long, I shouldn't have left you without a dope recipe to cook up... Ok so I'll just stick to cooking and leave the rappin' to the pros... So The Hubby and I went to NY in September and sad to say we couldn't resist The Big Apple's treats. Oh My Lunch!

Guys and Gals! Today's lunch was super yummy! I decided to give Golden Temple a try. My taste buds were pleasantly surprised, happily delighted, over joyed!!! I think you get the point. So this was our first visit to the cafe part of Golden Temple, we have visited the health food and supplement part of the store, but never the Cafe. I'm glad we decided to give this interesting eatery a try. Now at first glance, you have a mixture of individuals who are unique in personal style, to put it mildly- but these folks know good food, to say the least. I think I found my go to spot for good lunch choices. The vegan options are unbelievable! So the atmosphere left a little to be longed for, but you know I wasn't there for the ambiance, this time. I simply wanted a meal that I didn't have to worry about if the chef understood my request for vegan options- that's exactly what I found in this gem that has been a staple in the B'ham area for 41 years. Which turned out great! His search led us to the Southside of B'ham, right across the street from Highland's Emergency room entrance. Many of you who know me personally, know I am familiar with the location for unfortunate circumstances; however I have passed this secret gem many times without giving it a second thought. Happily the adventure to this location was a pleasant one this time. Our visit started with me taking a photo of the restaurant’s sign, as normal...right?! Oh no Surin!

Surin West Birmingham ⛔ Not So Vegan Friendly  So I decided since I have been trying to clean my house before September 1st I deserved a nice lunch out, by myself since the Hubby was at work and my Best Gal Pal was too. So I looked online for vegan options for lunch- I already had in mind that I wanted Surin West located in the Five Points Square on the Southside of B’ham. Ok my favorite thing about this place isn't the freshly remodeled décor, or the cool background music that plays while you enjoy your meal or the fact that this is a nice locale for business meetings and the like… my absolute favorite thing about this place WAS the coconut soup… Yep you see the huge WAS. That’s because I found out that this is not a vegan friendly option it contains chicken broth and fish oil, this sucks so bad!😢😲Well my waitress gave me the option for onion soup, today will be the first time trying it from here. Lets hope it goes well. So that was the first huge letdown to this meal. Next
