Oh but wait there's more!
I recently got back on my vegan wagon, and I'm so happy about it! It has only been a few days and I can feel the difference, for the better.
I realized that I had only been focusing on dinner recipes and making enough to last for lunch, but you know the old saying "breakfast is the most important meal of the day"... I agree, but I also feel that every meal, is the most important meal at that very moment. So I am going to do my best to share more of my recipes, for different meals of the day.
At this very moment, I will be sharing a quick, delicious breakfast option. It will take some work the night before, but it really is simple!
You will need a mason jar, or bowl with a lid.
Steel Oats, almond milk or whatever milk you desire thats non-dairy (for vegan options ) berries, a small banana( optional) agave nectar, or brown sugar to taste for desired sweetness.
Ok, so here goes: fill your mason jar half way full of oats, cover the oats with your milk, top with your choice of berries. Close the lid of the jar or bowl. Refrigerate overnight.
In the AM: add a little more of the milk, if you want your oats a little more soupy. My preference for oats, is to warm them for about 1 minute in the microwave or stovetop. I add my sweetener, half of my banana and enjoy!
You can also add granola, chia seeds, non-dairy yogurt to really add more proteins and chrunch to your oats.
The great thing about this recipe is, it takes 10 minutes tops to prep for a whole week worth of breakfast. You just pull it out in the morning and since its already packaged in your container you can literally grab it and go! I know I had the horrible habit of skipping breakfast, but not anymore! This recipe is inexpensive, but most importantly its a healthier choice than eating the prepackage oatmeal with added sugars and who knows what else.... You guys give it a try! Trust me, you'll be glad you did!
