First Vegan Meal at Home!
One Pot Curry Pasta
Alright I'm in love! This dish was so simple, inexpensive in my opinion (I'll post the receipt) quick to put together, like from start to finish 25 minutes tops and when I say one pot I mean it! Anyone who knows me, I mean really knows me, will know I love to cook a dish or two- but hate, no utterly despise the clean up part. If I could have someone come in to clean up after each cooking session, I would cook every single day! Well you kniw when it's necessary .
Ok, ok let me get back on task. Speaking of necessary cooking, with this dish we can eat off this meal for at least 3 meals. Now if you know my Hubby, knows he will eat leftovers til there are none left over, but I'm a different story twice is my limit! But honestly with this dish, I could see myself eating it til it's gone! Yes, “Ms.Picky I'm tired of that, let's go out to get something else”, said it- I'll eat it til it's gone. So I know you probably want to know what's in this dish, maybe see pictures and get the instructions on how to cook this totally awesome dish. Well here goes:
Pasta (I used fusilli, glutton free- just my personal preference, but any small pasta would work fine)
Zucchini ( I chopped 3 to make the meal last and hearty)
One red bell pepper (chopped)
Cherry tomatoes
One onion (chopped)
Minced garlic (2 teaspoons)
Coconut milk (full fat)
Diced tomatoes (2 cans)
Red curry paste (check the ingredients)
Salt and pepper to taste
Juice of 1 lemon,(fresh not the juice that comes in the bottle, but if that’s what you have and want to use it, go ahead- it just taste better with fresh squeezed lemon juice)

Ok now that you have your list together, here are the instructions:
In a large pot heat some oil, saute' your chopped onion for 3 or 4 minutes. Add the garlic, zucchini (cook until its soft), add bell peppers cook for 2 or 3 additional minutes.
Next add the remaining ingredients, except the cherry tomatoes. Cook until noodles are soft (13-15 minutes) then finally add your cherry tomatoes, allow to cook an additional minute. Season with salt and pepper to your liking and you're done! Bon Appetit!
