Midweek Barbeque... Is it Possible?

The long and the short answer is...yes!

Who said you have to wait for a picnic or tbe weekend to enjoy some great barbecue? If someone told you that, they lied! I just discovered a wonderful secret to homemade, midweek vegan barbecue. If you follow me on Instagram you, have already seen my video dancing with Bailey Boo (my fur baby) because I was so excited about this meal!
It's a nice change of pace from my normal Thai recipes, its quick, doesn't cause for many ingredients, taste pretty good and close to the typical southern style pulled chicken or pork barbecue you're probably use to.... without further ado here is the recipe:
Jackfruit 
  • 2 14-ounce cans young jackfruit in water
  • 1 cup BBQ sauce  + more for topping
  • 1 onion, chopped
  • Garlic clove , minced
  • 2 tablespoons of olive oil
AVOCADO SLAW (optional)
  • Coleslaw mix
  • 1/2 ripe avocado
  • 1/4 cup of lime juice
  • 1 minced garlic clove
  • Salt and pepper to taste
  • 1 tablespoon of olive oil
  • 1 tablespoon of Apple cider vinegar

In a pan, heat over medium heat, add chopped onions and minced garlic. Allow to cook until onions are soft and translucent, about 4 to 5 minutes. Open both cans of the young jackfruit, rinse, and dry with a paper towel. Add the jackfruit to the pan of onions and garlic. With a fork, pull the jackfruit apart, this will give the jackfruit the look and feel of shredded pork or chicken. You may season with salt and pepper to taste. Next add your choice of barbecue sauce. Cover and allow the jackfruit to simmer for 15 minutes or so.

While the "meat" is simmering, combine the 1/2 ripe avocado, garlic, olive oil, apple cider vinegar, lime juice and salt and pepper in a blender. Mix until smooth and creamy. Pour over the coleslaw mixture, dress thoroughly (if you want to add sweetness you can add a sprinkle of sugar, I omitted this from mine, since I would get the sweet taste from the barbecue sauce). Refrigerate.
I really wanted the barbecue feel, so I toasted my buns, before assembling the sandwich. 
By now, you are ready to experience the tasty, meaty substitute for yourself. So put the jackfruit on the bun, add the avocado coleslaw, and pair with a nice side dish. I paired my jackfruit barbecue with baked red potatoes dressed in olive oil and sea salt and pepper. Delicious!! This recipe will render 8 servings. It takes about 30 minutes in all for a great substitute to regular barbecue. Its a favorite in my household, I'm sure it will be in yours too!
